Papaya & Baobab Smoothie Crush

 

Hi Lovely People,

This week’s blog post is a quickie – short, simple and easy to digest. I have been feeling slightly restless these last couple of days, I’m not sure whether it’s planetary or just spring fever but this recipe reflects my mood. Like most of the things I cook.

Now that spring is here I’m experimenting with ice-cold smoothie blends for some long and refreshing drinks for beside the pool. It is amazing how much fun you can have by changing up one small ingredient in your usual food prep regime.

My sexy husband is going through a pawpaw phase at the moment. He keeps bringing them home to me and requesting I add the soft sweet pinky-orange fruit to his smoothies. I feel like fruit (or any wholesome food for that matter) is his idea of buying me flowers. He knows that if he comes home in the evenings with some kind of culinary delight he’ll have a happy girl on his hands.

The funny part is that he usually can’t stand papaya, but for some reason his papaya revulsion has turned into a papaya obsession. Don’t ask me how this happened, but the papaya ice cream I made him a couple of weeks back might have played a significant role in this.

Playing around with pawpaw has added some fresh funky fun to the kitchen, and I am bursting at the seams for mangoes, raspberries and blueberries to follow suit.

Ingredients:

½ C Ice
1 Banana
½ Papaya
1 T Honey
1 T Baobab
1 Inch Ginger
½ Lemon, Juiced
1 C Cashew Nut Milk

Optional:
 
½ t Cinnamon
1 T Maca

Directions:

Make your nut milk by placing 1/4 of a cup cashews in a high-powered blender with 1 cup of fresh spring water and blend on high until smooth and creamy. Strain through a nut milk bag if desired.

Note: Cashews unlike almonds do not create too much pulp after straining, whereas almonds leave lots of brown skin that is more noticeable in your final product.

Place the milk and the rest of the ingredients in a blender and blend on high until you have a smooth peachy consistency and colour.

Deck your glass out in some fun lemon and papaya slices and top your glasses up to the brim.

Sit in the beautiful sunshine and enjoy!
